1½ pounds fresh 80% lean ground beef
1 large onion peeled and grated
1/2 teaspoon ground black pepper
1. Combine all the ingredients, except tomatoes, in a large nonstick skillet. Spread and smooth out the meat mixture in the pan.
2. Place skillet over medium-high heat. Cook for about 4 to 5 minutes or until the juices are gone. Cut the meat into serving portions. You can cut them vertically, in a pie shape or into square shape. Flip the pieces over. Place sliced tomatoes over the meat. Lower heat to medium. Cover and cook for about 10 to 15 minutes or until all juices are gone.
3. Serve with white rice and salad.
