Eggs Baked in Avocado

4 medium ripe avocadoes

8 large eggs

Salt and pepper to taste


1. Preheat your oven to a temperature of 425°F.

2. Cut the avocadoes in half and remove the pit – scoop out2 to 3tablespoons of avocado from the middle of each half.

3. Place the halves cut-side up in a glass baking dish.

4. Crack an egg into each of the avocado halves and season as needed with salt and pepper.

5. Bake for 15 to 20 minutes until the egg is set. Serve hot.
