Roasted Vegetables

Roasted vegetable is one of my favorite dish.  This recipe is extremely easy.  It’s easy because you can make it in 30 minutes for your dinner.   Adding amazing flavor, make this roasted vegetables so addicting.  Follow the recipe to see how marinate your vegetables.  You can roast any type of vegetables you want with this recipe.  Enjoy!

 

Roasted vegetables

Ingredients

  • 4 zucchini
  • 1 cup mushrooms sliced
  • 1 cup grape tomatoes
  • 1 yellow pepper sliced
  • 1 green pepper sliced
  • 1/2 cup olive oil
  • 2 Tbsp lemon juice
  • 1/2 cup vinegar
  • 2 teaspoon dried parsley leaves
  • 2 teaspoon dried basil leaves
  • Pinch of salt and paprika to taste

Instructions

  1. In a large bowl, mix olive oil, lemon juice, vinegar, salt, paprika, dried parsley and dried basil.

  2. Add all vegetables to the mixture. Cover the mixture and refrigerate for at last 30 min to 1 hour.

  3. Thread the vegetables onto skewers.

  4. Preheat oven to 400 degrees.

  5. Spread vegetable on a prepared baking sheet. Bake for 20 minutes, stir gently and bake for another 10 minutes.
