Grilled Honey-Cumin BBQ Pork Packs
Prep Time 40 minutes
Total Time 40 minutes
Servings 4
Ingredients
1/2cup barbecue sauce
1/4 cup honey
2 teaspoons ground cumin
4 boneless pork loin chops, ¾ to 1 inch thick (1¼ lb)
2 large ears sweet corn, each cut into 4 to 6 pieces
1 cup ready-to-eat baby-cut carrots
2 cups refrigerated cooked new potato wedges (from 20-oz bag)
1 teaspoon salt
Instructions
1. Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray.
2. In small bowl, mix barbecue sauce, honey and cumin. On center of each foil sheet, place 1 pork chop, 2 to 3 pieces corn, ¼ cup carrots and ½ cup potato wedges; sprinkle each with ¼ teaspoon salt. Spoon 3 tablespoons sauce mixture over pork and vegetables. Bring up 2 sides of foil so edges meet. Seal edges, making tight ½-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
3. Place packets on grill over medium heat. Cover grill; cook 15 to 20 minutes, turning once, until pork is no longer pink and meat thermometer inserted in center reads 160°F. Place packets on plates. Cut large X across top of each packet; carefully fold back foil to allow steam to escape.
